Potensi Hidrolisat Protein Susu Kambing sebagai Sumber Peptida Bioaktif dengan Efek Antihipertensi

Penelitian ini bertujuan mengeksplorasi potensi hidrolisat protein susu kambing, terutama fraksi kasein ẞ, sebagai sumber peptida bioaktif dengan sifat antihipertensi. Proses hidrolisis dilakukan menggunakan enzim protease bromelin untuk menghasilkan peptida bermassa molekul rendah dengan bioavailabilitas tinggi. Derajat hidrolisis diukur untuk mengevaluasi efektivitas proses. Analisis in silico dan molecular docking digunakan untuk mengidentifikasi peptida bioaktif dengan daya inhibisi ACE (angiotensin-converting enzyme) yang lebih kuat dibandingkan lisinopril, inhibitor ACE komersial. Hasil menunjukkan bahwa hidrolisat protein susu kambing memiliki potensi sebagai solusi alami dan aman untuk pencegahan serta pengobatan hipertensi. Penelitian ini juga memberikan kontribusi pada pengembangan pangan fungsional berbasis susu kambing dengan menekankan pentingnya kontrol kualitas dalam penggunaannya.
